Monday Oatmeal Treats

Time was well spent over the weekend baking up Oatmeal treasures and what a great way to start the week ...  Oatmeal Treats on Monday  ...

Oatmeal Coconut Chip Cookies
I really wish I could say these were healthy, but ....
2 cups flour
1/2 cup sugar
1 tsp. baking powder
1 tsp. baking soda
1/2 cup brown sugar
1 cup butter flavored shortening
2 eggs
1/2 tsp. vanilla
1 1/2 cups quick oats
1 cup coconut
1/2 cup chocolate chips

Mix all ingredients and roll into 1 inch balls for each cookie.  Once on the cookie sheet press with a fork to flatten.   Bake in the oven at 350 degrees 10-12 minutes.

They are Delicious!!

Next up ...
Apple Oatmeal Bread
This bread seems a bit heavy once out of the oven, but it needs time to cool and this I could probably classify as (more) healthy!
That cookie shaped like a heart just happened - cool right!

1 cup all-purpose flour
1/2 cup wheat flour
1 tsp. baking powder
1/2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 cup brown sugar
1 1/2 cups old-fashioned oats
2 cups grated apple
1/3 cup dried cranberries
1 egg
1/2 cup water
1/4 cup vegetable oil
1/3 cup flaxseed

Completely mix all the dry ingredients and then combine with the remaining.   Pour into a greased loaf pan - makes one.   Bake in the oven at 350 degrees for 50-60 minutes.
